To understand the importance of the Sherry cask in the maturation process, it helps to know a little bit about Sherry itself. Put simply, Sherry is fortified wine made in Andalusia, Spain from white grapes; however, to quote the amazing and all-knowing, Karen MacNeil, “Sherry, the unsung hero of the great wine classics, is misunderstood, underappreciated, and wrongly cast as the libation of old ladies.” Ernest Hemingway was a famed fan of Sherry as was much of the British Isles for a time. When casks filled with Sherry were shipped from Spain to ports in the British Isles (including Leith in Scotland), whisky distillers would take the empty casks and refill them with whisky. The result was a win for everyone!

Smokehead Sherry Bomb, Ardbeg Dark Cove & GlenDronach 12
There is a lot to go into picking a good sherry cask… I tend to gravitate towards the smoke and peat - and there are some that are aged in sherry but aren’t my most favorite. There are two notables that I absolutely adore that carry the smoke, peat, and sherry, however. Those are the Smokehead Sherry Bomb and the Ardbeg Dark Cove. These are both a bit harder to find, so a sherry cask that I have open on my own shelves is the GlenDronach 12 which is absolutely delightful.
GlenDronach 15 & Kilchoman Cask Strength Sherry Cask
So GlenDronach 15 is a lovely whiskey many are not familiar with. For the out of the Speyside wheelhouse Kilchoman cask strength sherry cask.
GlenDronach, GlenAllachie 21, Michel Couvreur
Current fav sherry bombs would be GlenDronach and GlenAllachie 21 year, and the older offerings from Michel Couvreur (namely the 27 year and the 30 year).
GlenDronach, Oishi Sherry, Stranahan Sherry Cask
GlenDronach has been an easy Macallan derivative for a long time. It is rich with history and texture. Don't be afraid to branch out into other whiskey categories. Oishi Sherry from Japan and Stranahan’s Sherry cask from Colorado offer a change of pace. For Colorado to compete with Scotland, however, they might need a few years to catch up.
The Macallan, The Balvenie, Bowmore Darkest
So many good choices, The Macallan, Balvenie, Bowmore Darkest are always big hits but there are many wonderful sherry matured malts.

Highland Park 13 Year Private Cask
The Highland Park 13 yr private cask (private barrel of 13 year old Highland Park Cask #1673 that we split with Delilah’s in Chicago for our 36th anniversary back in 2007). Aged 13 years in a Sherry butt. The color of this lovely single malt is a dark ice tea color.
GlenAllachie 12
This has to be the GlenAllachie 12.

While Sherry may no longer be everyone’s drink of choice, whisky matured in a Sherry cask, with its dark color and fruit forward notes, continues to be a highly sought after choice.
